OVERVIEW   

Due to the increasing population and developing tourism sector and touristic facilities in our country, the cookery education given in universities has gained importance and the demand for this education has increased greatly. The development of travel opportunities has also affected domestic and foreign tourism and increased the need for qualified personnel trained in food and beverage services in these facilities. Istanbul Aydın University Anadolu Bil Vocational School Cookery Program was established in 2015 with the aim of training young cooks who are equipped with superior knowledge and skills, who can compete in the international arena, to meet the need for experienced staff who have a command of the region and Turkish cuisine in tourism enterprises, various (restaurants, etc.) places, to ensure the protection of the rich Turkish culinary culture in an academic environment and to promote this culture internationally.   

DEPARTMENT FACILITIES   

During the two-year program, candidates will be given a practice-oriented education to acquire all kinds of culinary skills with food preparation and presentation in a professional sense.Practical courses such as Culinary Practice, Spices and Sauces, Bakery Products and Desserts, Cold Kitchen, Pastry and Chocolate are given to cookery students to learn different cultures and food types.Practice courses are held in a professional practice kitchen organized with high-level technology in Anadolu Bil Vocational High School, where students can develop their knowledge, skills and creativity. This kitchen has an area of 640 m2. Students have the opportunity to make all kinds of preliminary preparations and cooking in practice courses. In addition to the courses they take, students are obliged to do three on-site practices (42 days) and one summer internship (30 days) in 4 semesters in order to reinforce their professional development, strengthen their human relations and use the theoretical knowledge they have acquired. These applications are carried out for a total of 72 working days and at the end, the notebooks in which they write the information they have learned are examined and evaluated.   

CAREER OPPORTUNITIES   

After completing their education, graduates of the department of cookery can work as cooks or managers in hotels, restaurants, catering companies both in Turkey and abroad. They can take part in rising professions such as flying cookery, which has emerged recently.They can also play an active role as food writers, stylists and similar positions in the food and beverage departments of media outlets.
